Our menu consisted of Black-Eyed Pea salad, Fried Green Tomatoes, Buttermilk Biscuits, Shrimp and Grits with Red-Eye Gravy and a decadent Angel Food Cake with Pecan Praline Sauce. To begin, Chef gave us a great story on the origins of many of the foods we would be working with including some southern history. What was really great about the class is that he focused, not only on the how-to-do things, but why you do things a certain way. Clearly Chef Darin has done this thousands of times given his level of comfort in front of the group, but this was much more than a cooking class. It was a cooking story with history, technique, training, and much of the who, what, when, where and why - in addition to the how. The class was very interactive. We started as a group and broke into smaller teams to complete our meal. The menu was fun and the food was superb. I don't think anyone (out of 12) had a blooper and it all came off flawlessly. We had a 10 year old in the class and he was made to feel included, and ended up being a fun part of the class. Highly recommended. I will be telling everyone I know and will surely be back again soon.

He has such a great depth of knowledge from the origins of certain foods to preparation to technique. He encompassses all topics in such a down to earth way that you never feel intimidated to ask a question. Even the most well versed cooks will leave learning something new. It was delicious! Our menu consisted of black eyed pea salad, fried green tomatoes, shrimp and grits, herb cheddar biscuits and a pecan praline angel food cake. Every single part of this meal was absolutely delicious. You get hands on experience with each part of the preparation. I would recommend the class to the novice and the experienced cook. You won’t be disappointed. He also has a store front where you can purchase a variety of all things kitchen as well as some delicious jams, jellies and sauces. Enjoy!
